Can someone provide me Pumpkin Roll recipe?

My 11 years old nephew has come down to meet us, and I am pretty excited about it! He is going to spend his holidays here in Chicago with us. He is a sweet tooth and loves to have muffins and cakes. I want to know about pumpkin roll recipe, as it is a new recipe for me, and I have heard about it from my neighbor. I would like to know about this recipe in as short time as possible, because he is going to stay here only for couple of days!

Pumpkin roll with cheese

Ingredients:

White sugar :-( 1 cup), Canned pumpkin :- (2/2 cup), Allpurpose flour:- (3/2 cup),

Egg: - (3), Ground cinnamon :- (1/2 teaspoon), Baking soda:- (1 teaspoon), walnut chopped :-( ¼ cup),

Vanilla extracts :-( ¾ teaspoon), Ounces cream chasse :-( 9 Ounces),Butter soft :- (2 tablespoon),

Confectioners’ sugar :- (1 cup) and confectioners’ sugar fordusting.

Method:

Preheatoven to 375 degrees F (190 degrees C) and Grease a 15x10x 1 inch baking pan andline with parchment paper, Grease and flour the paper, In a large bowl, beateggs on high for 5 minutes and now Gradually add white sugar and pumpkin andthen add flour, cinnamon, and baking soda mix, Spread batter evenly in pan.Sprinkle walnuts evenly chopped on top and bake at 375 degrees F (190 degreesC) for 15 minutes or until cake springs back when lightly touched andimmediately turn out onto a linen towel dusted with confectioners’ sugar.

Peel off paper and roll cake up in the towel, starting with the short end. Cool. To Make Filling and Mix confectioners’ sugar, vanilla, butter or margarine, andcream cheese together till smooth and are carefully unroll the cake. Spreadfilling over cake to within 1 inch of edges and then roll up again. Cover andchill until serving. Dust with additional confectioners' sugar, if desired. And enjoy!

Here is the recipe for pumpkin roll. Ingredients include 3 eggs, 1 cup sugar, 2/3 cup pumpkin, 1 tsp lemon juice, 3/4 cup all-purpose flour, 1 tsp baking powder, 2 tsp cinnamon, 1 tsp ginger, 1/2 tsp nutmeg, 1/2 tsp salt. For filling ingredients required are 8 oz. cream cheese, 4 tbs butter , 1 cup powdered sugar, 1/2 tsp vanilla. Now, In large bowl, combine eggs and sugar, beating with an electric mixer until thick and light yellow in color. Add pumpkin and lemon juice, mixing until blended. In separate bowl, combine flour, baking powder, spices and salt. Add to egg mixture, mixing well. Spread batter into greased and waxed pan. Bake at 350 degree for 15 minutes. Remove from oven. Cool for 15 minutes. Place cake on clean tea towel sprinkled liberally with powdered sugar. Cool 10 minutes longer. From 10- inch side, roll cake up in towel. Set aside. While cake is cooling in towel, prepare filling. Beat together cream cheese and butter; stir in powdered sugar and vanilla and blend until smooth. Unroll cake. Evenly spread filling over cake. Roll up cake. Wrap in plastic wrap. Cover and chill at least 1 hour. Slice before serving. And it is ready. Hope you like it!
