Can someone tell me about vegan crock pot chili recipe?

My 10 years old daughter is a vegetarian. Moreover, she wants to taste some crock pot recipe on her birthday, which is just round the corner! I have asked for the recipe of crock pot chili from a couple of friends, however, they all asserted that the recipe contains non-vegetarian food items. I want to know whether there could be any vegan crock pot chili recipe which can be equally delicious as the one which contains non vegetarian ingredient. Can someone advice?

You can easily make a vegetarian crock pot chili which will taste as good as its non -vegetarian version. To make a simple and basic vegan crock pot chili, you will need two chopped onions, five cloves of garlic (minced), one chopped red or yellow bell pepper, two cans (about a pound) of kidney beans, two tablespoons of red chili powder/ red chili flakes, one heaped tablespoon of paprika, a pound of corn kernels, a teaspoon of cumin, about two pounds of finely chopped tomatoes, one finely sliced carrot, one tablespoon of dried parsley, one tablespoon of dried oregano, one tablespoon of dried basil, salt to taste, a dash of tabasco/ red pepper sauce, and water (if and as required).

To prepare the chili, combine all the ingredients in a slow cooker. Season as required, then cook on a medium to high heat for at least two hours.

You can adjust the amount of chili powder and the paprika depending on how spicy you want it. You can also add different vegetables to this dish. For a variation, try replacing half the amount of kidney beans with pinto beans or black beans. Also, you can add a dash of soy sauce to give this dish an extra edge.
